First light

Pani puri, chilled tamarind water, zobo pearls

Mumbai, Maharashtra 10 minveg

A crisp shell filled at the table. The zobo pearls are our nod to Abuja: hibiscus, clove and a little ginger, set into beads that burst against the tamarind.

Swaps

Diets and allergies

We cook for most diets with 48 hours' notice. Our kitchen handles nuts, gluten and dairy, so we cannot promise an allergen-free plate.

Vegetarian

A full vegetarian journey on both menus: jackfruit galouti, paneer in place of goat, and a green moilee of plantain and okra.

Nuts

Three courses use nuts. We swap almond and cashew pastes for melon seed and coconut, and the kulfi for mango.

Fish and shellfish

The coast course becomes tandoori cauliflower; the moilee can be made with chicken or plantain.

Heat

Every course can be made gentler. Tell us when you book, and your host will check again at the table.
