Keeping soup hot and swallow soft on a 30 minute ride

What we learnt from 4,000 bowls of egusi and a lot of complaints in our first month.

A plate of food ready to pack

Swallow goes in film first

Pounded yam dries out fast. We wrap each portion in food grade film straight from the mortar, then put it in a lidded tub. It traps the steam and keeps it soft for about 45 minutes.

Soup goes in sealed bowls

Soups are poured at a rolling simmer into bowls with clip lids, so nothing leaks onto the swallow or the other brands in the bag.

Hot and cold do not touch

Each bag has a hot sleeve and a cold sleeve. Your Leafline smoothie stays cold next to your Soup Parliament egusi.

Distance changes the plan

For Gwarinpa and Lugbe we add a thicker sleeve and pack soup last, so it leaves the pass hottest.

A cold soup is a lost customer. We would rather be a minute late than lukewarm.
