A night at the grill
What you will see
From five the coal goes in at the left end and the first sticks come off by half past. By eight the whole fourteen metres is working, the queue runs to the gate and the roof is full of families, office crowds and students from the university. Mallam Sani works the hottest end; the cutters slice to order beside him, and every stick is wrapped in paper with onions, tomatoes and a pinch of extra yaji.
On Fridays and Saturdays the grill runs until midnight. Sundays are quieter and better for children, with level 0 sticks cooked on their own tray.
The smell reaches the roundabout before the sign does.
