Cold, slow and patient
Brass Lager is 40 percent Kaduna sorghum and 60 percent pale barley malt, fermented cold for 14 days and then conditioned near freezing for three more weeks.
The result is crisp and dry, with a cracker-like malt and a little lemon from the hops. It is the beer we pour most, and the one we are proudest of.
