Lock the price
We agree a fixed price per kilo and take a 30% deposit by transfer. The price holds even if the market moves.

We brief the crews
The boats and farms know what we need. Big snappers and lobsters are set aside as they land.

Cleaned, cut and iced
Everything is cleaned and cut overnight, packed on ice in labelled boxes, one per dish.

Delivered at the time your caterer asks, with a printed weight list for each box.
