Making Bloom Zero, an alcohol-free beer with flavour

Nineteen test batches, one stubborn brewer and a gentle process that keeps the taste. The story of our alcohol-free lager.

Clear glass of golden drink

Why bother

Nearly a third of what our guests order has no alcohol in it. Drivers, people who do not drink for faith or health, and people who simply fancy something lighter all deserve more than a can of fizzy juice.

Brewed as a lager first

Bloom Zero starts as a full lager, brewed and conditioned like Brass Lager. That gives it real malt flavour. Then we remove the alcohol slowly at low temperature, so the flavour does not cook off.

Adding back the brightness

Removing alcohol takes some aroma with it. We add a late dose of hops and a little lime zest to bring the brightness back, then carbonate it firmly so it feels crisp.

What came next

Bloom Zero led to our house sodas: Zobo Fizz with the same hibiscus as the Zobo Saison, and Ginger Bloom with fresh ginger. All three are made on the same kit, by the same team.
