Pond to plate, room by room
Seven rooms, one fish. Scroll to walk from the hatchery to your kitchen; the frame on the left follows you, and the floor plan shows where you are on the farm.

The hatchery
28 to 30°C waterChecked every 3 hoursClean borehole waterEvery Bluefin fish starts here, in warm, clean tanks fed by our own borehole. Healthy parent fish are kept apart in a quiet shed, and hatchlings live on their yolk sacs for the first few days, then on live feed.
We would rather hatch fewer fish and lose fewer. Calm water makes strong fish.

Nursery tanks
Fed 5 times a daySorted by size weeklyWater changed dailyFry move into shaded nursery tanks, where we feed fine starter feed five times a day and sort them by size each week so the small ones are not bullied. By day 30 they are fingerlings, the size farmers buy from us.
Sorting is slow work, and it is the reason our fingerlings grow evenly in your pond.

Grow-out ponds
14 earthen pondsStocked at safe densitiesShade trees on the banksJuveniles go out to fourteen earthen ponds, each planted round with shade trees. We stock fewer fish per pond than many farms, which keeps water cleaner and fish calmer, and lets them grow at their own pace.
You can taste a stressed fish. Space and clean water are the secret ingredients.

Feed and water care
Floating feed onlyOxygen and pH checked twice dailyWater records keptFeeding time is the best show on the farm. We use floating feed so we can see exactly how much each pond eats, and stop before waste fouls the water. Oxygen and pH are checked morning and evening, and written in the pond book.
If you cannot see the fish eat, you are feeding the pond, not the fish.

Harvest
Harvested to orderFeed stopped the day beforeGraded by weightWe harvest to order, early in the morning when the water is cool. Feed stops the day before, so fish are clean inside. Each fish is graded by weight, and live fish travel in aerated tanks.
Your fish is still swimming at sunrise on the day it reaches you.

Cleaning and smoking
Hardwood smokeFood-safe cleaning roomPacked when coolFish for the fresh counter are cleaned and cut in a tiled, food-safe room. Fish for smoking go into our clay kilns over hardwood for up to two days, turned by hand, until they are firm, golden and keep well.
Smoking is patience. Rush it and the fish breaks; take your time and it keeps for weeks.

How old is your fish?
Drag the slider to follow a catfish through its life on our farm. Weights are typical for our ponds, not a promise for yours.

Tour FAQ
Do you use hormones or antibiotics?
We do not use growth hormones. Fish are treated only if a vet advises it for a sick pond, and those fish are kept out of sale until it is safe.
Where does your water come from?
From our own borehole, pumped by solar, and topped up with clean rainwater in the wet season. Ponds are drained and limed between cycles.
Can children feed the fish?
Yes, on the Saturday tour children feed one pond with a guide beside them. It is the part they remember most.
Is the smoking house safe to enter?
Visitors stand at the doorway with a guide. It is warm and smoky, so we keep groups small.
End the tour at your table
Order fresh or smoked fish for tomorrow morning, or buy fingerlings to start your own pond.
